cup salsa

cup green bell pepper

yellow squash

cup dried black beans

cup cilantro
Instructions
0 Chop and slice your veggies 1 In a medium-large pot, sauté the diced Green Pepper with a little water over medium heat for 2-5 minutes 2 Add the sliced Zucchini, Quinoa, Salsa, and 2 cups of Water into the pot and bring to a boil. Cover and reduce heat to a simmer. Let cook for 20 minutes. 3 Turn the heat off, quickly open the lid, and stir in the black beans. Re-cover and let sit for 5 minutes (This allows the beans to heat up if you are serving this dish right away!) 4 Uncover the quinoa, stir in the cilantro, and fluff with a fork.View original recipe
